Hostellerie de Plaisance is a 200 year old stone building, set on 14th century
foundations, is the best choice in this medieval town. The well-styled rooms,
some with views of stone monuments and towers, welcome sophisticated wine
tasters and buyers from all over the world. Some rooms are small, but the best
doubles have terraces where you can enjoy breakfast. Each comes with a midsize
bathroom with a combination tub and shower. The cuisine of Christophe Canati is
the best known and most praised in the area. He works with the region's
bountiful seasonal ingredients, especially game dishes, usually available
October through February. Otherwise, menu items include a salad of grilled quail
with avocados; a civet of sturgeon cooked with local red wine; a timbale of
filets of sole with crayfish tails; a ballotine of foie gras with shallots and
grilled toast; and filet mignon of veal with wild mushrooms. Top it all off with
a warm soufflé flavored with pear liqueur and served with nougat ice cream and
chocolate sauce.
The Plaisance has been faithfully restored to its 18th century origins. The
panoramic terrace offers a wonderful view. The entire property is graced with an
elegance which turns the Hostellerie into an exceptional setting, set off by a
residence with four suites in the Château Pavie. |
